Choose MP3 when the picture is not important and you only need audio. Choose MP4 when visual information matters. Video usually requires far more data than an audio-only file, so extracting audio can reduce storage dramatically when the picture adds no value.

What does audio bitrate mean?
Bitrate describes how much encoded audio data is used each second. Higher bitrates normally create larger compressed files. They cannot restore detail that was missing from the original source, so automatically selecting the highest number is not always useful.
Which video resolution should you pick?
